RESUMO:

The work investigates the consumption habits and purchase patterns of honey in the
Metropolitan Region of Santarém (MRS), in order to outline the profile of the honey consumers.
In addition, the first chapter of the dissertation carried out a bibliometric study and a brief
systematic review on honey consumption, from articles indexed in the Web of Science. The
bibliometric analysis retrieved 472 articles, of which 22 were considered in the systematic
review, published between 1958 and 2018, highlighting the year 2016 that appeared with the
largest number of publications. The United States presented the largest number of articles in
the bibliometric survey (101) and the main authors were Bogdanov (Sweden), Crailsheim
(Austria) and Wackers (Belgium). For the works of the systematic review, the country with the
most publications was Romania (4) and the author with the most publications was Pocol (3).
Still in the review, the articles focused on the analysis of the consumers’ profile, reasons that
lead to the purchase and consumption of honey, perceptions about the market price of the
product, among other aspects. The second chapter of the work investigated the profile of RMS
honey consumers. To do so, interviews with potential consumers were conducted in the main
supermarkets and free markets of the region, in the municipalities of Belterra, Mojuí dos
Campos and Santarém. The questionnaire consists of four distinct sections and a Likert scale.
Data were processed and analyzed in the software Microsoft Excel and Paleontological
Statistics. The sample consisted of 600 people, 53% female and 47% male. The level of
schooling with the highest number of respondents was high school, totaling 39% of the sample.
The age range with the most representatives is between 25 and 34 years, indicating a group of
young consumers. When asked about the honey consumption, 57% claimed to consume it, due
to this being a healthy product (65%) or tasty (35%). We also observed that 88% of the
interviewees consume only honey, among the products coming from bees. Those who did not
consume it justified this choice mainly because of lack of habit (51.16%) or because the taste
of honey (30.23%). Regarding the purchase of honey, among those who consume it, 35% stated
that they never bought the product. On the other hand, for the usual purchasers of honey, 91.8%
prefer to obtain it directly with the producer or at free fairs. The main characteristics cited as
important by consumers at the time of purchase were color (48.6%) and texture (18.9%). MRS
consumers still see honey as a good health product and treat it as a medicine in most cases, as
well as prefer to consume it in natura. The price of honey is still a controversial issue because,
while the product is not considered cheap by 44% of the interviewees, the price did not figure
as an important criterion at the time of purchase. MRS still has limitations with regard to
consumer information about the characteristics of the honey in the region. However, it has been
observed that local producers are able to transmit security in the sale of the product, a fact that
may improve the market in the region.
