RESUMO:

Among tropical fruits, cupuaçu (Theobroma grandiflorum Schum.) Is one of the most important Amazonian fruits due to its characteristic flavor and aroma, in addition to the use of its pulp in the food industry and seeds in cosmetic formulations. The production of the fruit in Santarém reached 109 tons in 2019. The exploitation of this fruit generates a significant amount of waste, seeds that are partially used by the cosmetic industry and peels that have no use whatsoever and that can become a source of molecules of biotechnological interest. The use of microbial biotransformation as a biotechnological strategy for the production of bioactive molecules has been gaining prominence and for that purpose, lactic acid bacteria such as Lactobacillus spp. arouse interest. Therefore, this project aims to evaluate the effects of fermentation of extracts of agroindustrial residue from the bark of T. grandiflorum by Lactobacillus plantarum LP62. For this purpose, ethanolic extracts of cupuaçu bark residues will initially be obtained. Different concentrations of the extracts will be added to the MRS broth culture medium and the effect of adding the extract on the growth of the Lactobacillus plantarum LP62 strain analyzed using the dilution and plating method on MRS agar medium. The best concentration for bacterial growth will be checked and used for the fermentation process. The extraction by partition with the solvent ethyl acetate of the fermented extract will be analyzed chemically by HPLC as well as the antioxidant and antimicrobial potential. With these procedures it is intended to evaluate the effects of fermentation of extracts of agro-industrial residues of T. grandiflorum by lactic acid bacteria.
