SUMMARY:

Açaí is the fruit of the açaí tree (Euterpe oleracea Martius) native to the Amazon region, highly appreciated for being a food with a high nutritional content. It is a fruit of economic, social and environmental importance for the Amazon region and has a wide range of uses. However, during processing there is a large generation of waste, which represents a serious environmental problem. The reuse of agricultural residues with the creation of new products is an excellent alternative to minimize the environmental impacts that may be generated. Traditionally, family farmers in western Pará produce and sell a product made from the açaí seed, which after drying, roasting, grinding and preparation, becomes a hot drink which they call açaí coffee. However, this product does not have specific regulation of identity and quality standards by the responsible bodies. The objective of this study was to carry out a bibliographic review about the açaí kernel for food purposes, in addition to evaluating different methods of processing the roasted açaí kernel for the preparation of a hot drink, in order to determine its physicochemical characteristics and implement good manufacturing practices. The bibliographic review had as a methodology the search for studies through the digital platforms Google Academic, Periódico Capes and Scielo. Subsequently, the studies were grouped into categories regarding the approach of the following themes: Benefits of açaí, economic importance, açaí residues, functionality of the açaí seed and its use for food purposes. 56 articles were analyzed where 35.71% addressed benefits and/or bioactives linked to açaí, while 8.92% of the articles reinforced the economic importance of the açaí production chain for the northern region. Regarding the methodology of the different methods of preparing the roasted açaí seed, the study was carried out in a production from family farming in the Amazon. Site visits were carried out to assess good manufacturing practices and verify the processes involved. The physical-chemical characterization was carried out through the analysis of products made with toasted açaí seeds. Particle size, humidity, ash determination, swelling index, acidity index, pH, volatile compounds, analysis of centesimal composition and microbiological analysis of powdered açaí seeds were evaluated. Subsequently, soluble solids (°Brix), viscosity, determination of phenolic compounds and antioxidant activity in samples of the drink made with açaí seeds were evaluated. The production site presented 53.69% of adjustments regarding good manufacturing practices. Many of the physicalchemical parameters analyzed for the powders obtained from açaí seeds are within established norms for plant drugs. The main volatile constituents found in the crushed roasted açaí seed powder were p-tolualdehyde, 5-methyl furfural and furfural, which also had higher amounts of proteins, lipids and caloric value, in addition to a high content of phenolic compounds. Therefore, it was the chosen way to continue the studies. All beverages made from roasted whole or ground açaí seeds showed an antioxidant effect. Therefore, it is possible to simply and economically prepare a hot drink from the roasted açaí pit with attractive functional characteristics, being an alternative for the açaí production chain as an alternative to the reuse of the açaí pit, in addition to contributing to job creation and income and reduction of waste generation.
