RESUMO:

With a herd of 222 million head in 2017, Brazil ranks second in the world rankings, second only to India and also ranks second in the world in commercial beef production, behind the United States. Controlling the potential presence of contaminants in animal tissues is among the most relevant problems facing the Brazilian meat industry today, and there is a lack of work that gathers data on the occurrence of the main contaminants in meat products. Thus, the present work aims to evaluate the concentration of mineral elements in the liver and muscles of cattle from the states of São Paulo and Pará, as well as to evaluate the concentration of pesticides in these tissues. Two large slaughterhouses will be selected, one in the state of Pará and one in the state of São Paulo. The amount of sample / animal / day will be 10% of the amount slaughtered per day in the slaughterhouse, with biweekly collections until a total of 500 animals per State is completed. Only females and liver and muscle samples will be used, as well as information on the animal's origin, place of ownership, type of rearing system (extensive or intensive), proximity to the factory or mining area. Once collected, all samples will be processed in the laboratory to determine the concentrations of the major toxic (As, Cd, Pb and Hg) and essential (Co, Cr, Cu, Fe, Mn, Mo, Se and Zn) elements by Mass Spectrophotometry with Coupled Plasma Source. The concentration of pesticides will occur from the partitioning of the extracted samples and will be performed according to the method of the Association of Official Analytical Analytical Chemist. As indicated above, samples from 1,000 animals will be collected, 500 animals per state. Samples from different tissues will be subjected to acid digestion and open system nitric-perchloric digestion.  Throughout the process an analytical degree program will be undertaken, including the study of white and certified reference materials. All statistical analyzes will be performed in SPSS for Windows (version 2.0). Toxic and essential metal analysis levels will be white corrected and values below the detection limit will be assigned a value corresponding to half of the quantitation limit. Data distribution analysis will be performed and when they present non-normal distribution they will be transformed logarithmically. Analysis of variance will be performed using general linear models and study of principal components to evaluate the effect of different sources of variation analyzed.
