RESUMO:

The Brazilian egg production chain has high technology, conquered by the knowledge and advancement of genetics with the use of highly productive lineages, nutrition, health, environment and management. The system stands out for the diversity of both the use of automated farms in cage battery systems and for the highlight of alternative production characterized by the extensive or semi-extensive production model (VIEIRA, 2014). In view of the large number and types of egg producing and processing establishments, differing not only in the type of farming system, but also in management, feeding and welfare practices, it is necessary to carry out analyses that evaluate the quality of eggs in order to avoid diseases to consumers. That said, this study aims at analyzing the morphological, physical-chemical and microbiological structure of eggs from the country and industry, commercialized in the municipality of Santarém-PA, Brazil. The eggs will be collected at local fairs and supermarkets and randomly chosen. For this study, 30 eggs from each production system will be used, and from the conventional production system will be collected from Avícola Tapajós and the eggs from Mato Grosso, totaling 90 units. The eggs will be analyzed for the following characteristics: weight, height and percentage of albumen, Haugh unit, yolk index, thickness, weight and percentage of shell and microbiological analysis. The study will take place in the municipality of Santarém, West of the State of Pará (geographical coordinates 2º45'06" S and 54º70'09" O) in the lower Amazon region. The municipality is the third most populated in the state, with approximately 304,589 inhabitants, behind only Belém with 1,492,745 and Ananindeua with 530,598 (IBGE, 2019). Considering what is commonly observed in the fairs and markets of the municipality of Santarém, it is expected to find significant differences between the groups of eggs of the caipira type and the industrial egg of the region both in the analysis of the internal and external quality, as well as in the microbiological analysis, mainly due to the management, transport and storage conditions carried out in the different production systems.
